Ingredients (4 servings)
1 Pork tenderloin (3-4lb Loin) * 1 clove garlic, crushed
* 1/2 cup soy
sauce
* 2
oranges, juices
* 1 lime, juiced* 1/2 cup tamarind concentrate
* 1 tablespoon Dijon mustard
* 1 teaspoon fresh grated ginger
* 1 tablespoon chopped scallions
Olive oil for brushing
1. Combine marinade ingredients ("*") in
a bowl and stir to combine.
2. Place loin in a plastic, sealable
bag. Pour marinade and seal. Marinate overnight in refrigerator.
3. Remove pork tenderloin, pat dry,
brush olive oil onto grill for 30-40 min, rotating for even temp.
3. For over roasting, place on tray, brush with olive oil and roast @ 350 for 45-50 min
4. Bring reserved marinade to a boil
in sauce pan, lower the heat and simmer until reduced by half
5. Remove Pork, allow meat to rest
about 10 minutes, slice, drizzle marinade and serve
Substitutions
This recipe can be prepared without the Tamarind paste or substituted with any sesame or similar paste. This will thicken as well as subtly flavor your glaze. Green onion or fine diced shallot can be substituted for the scallions and minced or ground ginger may be used as well.
