Chicken w/ Honey & Thyme

One point to note with all my chicken dishes, there is a lot of commonality. Many of the recipes are prepared the same with the difference being the glaze. I strongly prefer the use of Chicken Thigh which has such a wonderful earth flavor and adopts the accent flavors wonderfully.

Ingredients
3 - 4lb chicken thighs                                                 
1 tablespoon freshly squeezed lemon juice           
1 tablespoon extra-virgin olive oil
2 tablespoons minced shallots
2 tablespoons minced fresh garlic
2 teaspoons chopped fresh thyme leaves
2 tablespoon honey
3 tablespoons water                                                  
1 teaspoon Poultry Seasoning                        
Kosher Salt & Fresh Ground Pepper (to taste)

Directions
1. Season chicken w/salt, pepper & poultry season, add to pan (5 min)
2. Turn, sprinkle with thyme and cook for additional 5 min and remove
3. In the pan, add shallots, garlic and saute till soft
4. Add water and whisk to break up ingredients in the pan, 2 min
5. Add lemon juice, oil, honey and reduce to 1/2
5. Add chicken and drizzle to glaze & warm chicken, serve

Chicken breasts may be used and please account for this during cooking to assure you have reached a safe internal temperature.
